Why are we dry-aging? Our cooler has been locked for 20+ days which ensures that the cooler maintains consistent temperature, air flow, and humidity so that the bad bacteria DOESN’T grow…but natural enzymes in the meat break it down for intense flavor, increased tenderness, and makes it easier to chew/digest. Think of it like aged cheese or aged wine!!!
